Shimi Ka Achar! Wow ! I love this delicious-beyond-words Sikkimese string bean pickle with Sel Roti ! Try this traditional fare once in a while to give your taste buds a change ! Tell me if you agree with me on Shimi Ka Achar !
Ingredients
  String bean 1⁄2 Kilogram
  Sesame seeds 100 Gram
  Green chillies 7
  Lemon juice 1 Teaspoon
  Salt 1 Teaspoon
Directions

Wash the string beans thoroughly and cut it into thin slanting slices.
Boil the beans for five minutes and strain it.
Roast the Sesame seeds for 3 minutes and then grind it to make a thick paste.
Fry few sliced green chillies in hot oil.
Mix the soaked beans with fried chillies, salt, lemon juice and the paste of sesame seeds.
