Chicken Curry Bombay
|Onion||1 Medium, cut into wedges|
|Garlic||2 Clove (10 gm), minced|
|Curry powder||2 Teaspoon|
|Olive oil||1 Tablespoon|
|Boneless chicken breast halves||2 , skinned and sliced 1/4 inch thick|
|Canned stewed tomatoes||14 1⁄2 Ounce (1 Can, Del MonteÂ® Original Style)|
|Seedless raisins||1⁄3 Cup (5.33 tbs) (Del MonteÂ®)|
|New potatoes||16 Ounce, drained and cut into chunks (Whole, 1Can, Del MonteÂ®)|
|Canned cut green beans||16 Ounce, drained (1 Can, Del MonteÂ® Blue Lake)|
In large skillet, cook onion, garlic and curry in oil over medium-high heat until onion is tender, stirring occasionally.
Stir in chicken, tomatoes with juice and raisins; bring to a boil.
Reduce heat to low.
Cover and simmer over medium heat 8 minutes.
Add potatoes and green beans.
Cook, uncovered, 5 minutes, stirring occasionally.
Season to taste with salt and pepper, if desired.
