Indian Summer

Indian summer is a fresh fruit and veggie salad. Made with shredded carrots with added pineapple and raisins, the indian summer is spiced with cinnamon and orange extract for more flavor. Served as a dessert or a side with meats, this is an enjoyable preparation.
Ingredients
  Crushed pineapple in juice 1⁄2 Cup (8 tbs)
  Shredded carrots 2 Cup (32 tbs)
  Raisins 1⁄4 Cup (4 tbs)
Directions

1. Toss all ingredients together gently.
2. Chill and serve on a lettuce leaf.
