Baked Potato Samosas with Cilantro Lemon Garlic Dressing!

I love Indian potato samosas, so I created my own healthier and easier version of baked potato samosas in wonton skins and paired with a refreshing cilantro, garlic and lemon dressing.
Ingredients
  Wonton skins 12
  Idaho potato 3 Large (cut into chunks)
  Frozen peas and carrots 1 1⁄2 Cup (24 tbs)
  Curry powder 1 1⁄2 Tablespoon (for Potato Filling)
  Salt 1 Teaspoon (for Potato Filling)
  Pepper 1 Teaspoon (for Potato Filling)
  Olive oil 4 Teaspoon (for Potato Filling)
For cilantro dressing
  Cilantro bunch 2
  Garlic cloves 3
  Lemon 3 , juiced
  Rice vinegar 2 Tablespoon
  Olive oil 2⁄3 Cup (10.67 tbs)
  Salt 1 Teaspoon
  Pepper 1 Teaspoon
  Pepper flakes 1⁄2 Teaspoon
