Baked Khichdi -Rice Casserole- One Pot Recipe Challenge

Ingredients

Dal 1 Cup (16 tbs) (I used a mix
Rice 1 1/2 Cup (24 tbs)
Oil 2 Tablespoon
Cumin seeds 1/2 Teaspoon
Cinnamon piece 1
Cloves 1/4 Teaspoon
Dried red chile 1
Peppercorns 1/4 Teaspoon
Ginger 1 1/2 Cup (24 tbs) , chopped
Green chili 2 , chopped
Potato 1 , cubed
Carrot 1 , cubed
Salt To Taste
Turmeric 1/2 Teaspoon
French beans 10 , one inch piece cut
Cauliflower florets 3 , chopped in an inch pieces
Peas 1/4 Cup (4 tbs)
Water 2 Cup (32 tbs) (as needed)

Directions

GETTING READY:

Wash rice and dal. Soak in water for 30 minutes.

Preheat oven at 180°C.

       

MAKING:                        

Heat a casserole and add 2 tbsp oil to it.

Add cumin seeds, cloves, cinnamon, red chilli, peppercorns, chopped ginger, green chilli and fry well.

Add potatoes, carrots and season with salt. Add turmeric and mix well.

Add french beans, cauliflower, peas, rice, dal, water and cover with lid.

Cook for 20 minutes and once done, allow to rest for 15 minutes.

Mash the khichdi with spoon and pour ghee on top.

Sprinkle salt, coriander powder, chilli powder, chopped coriander, cheese and pop into oven.

Bake for 20 minutes.

Increase temperature to 210° and broil for 5 minutes.

 

SERVING:                       

Serve with chutney or yogurt and enjoy!
