These Saffron or Kesar scented Pedas are perfect to celebrate any occasion, especially the upcoming Diwali. Inspired by Manjula's Kitchen.
Whole fat milk | 4 1/3 Cup (69.33 tbs) , divided | |
Lemon juice | 2 Tablespoon , mixed with water to make 1/4 cup (from 1 lemon) | |
Unsalted butter | 3 Tablespoon | |
Milk powder | 1/3 Cup (5.33 tbs) | |
Saffron strands | 1 Pinch | |
Crushed cardamom seeds | 1/4 Teaspoon | |
Superfine sugar | 1/2 Cup (8 tbs) | |
Pistachios | 8 |
MAKING:
In a saucepan, boil 4 cups of milk and add lemon juice an water to it.
Once it curdles, strain in a cheese cloth and squeeze out water. Allow paneer to cool.
Melt butter in a saute pan and add remaining milk to it. Add saffron strands, milk powder and mix well.
Add paneer and press well.
Stir for 10-13 minutes until it gets the consistency of a dough.
Transfer to a plate and allow to cool.
Add cardamom powder, sugar and knead well.
Divide and roll into small pedas.
Garnish with whole pistachios and saffron strands.
