These dahi bhalla or dahi vada chats will literally melt in your mouth. Watch on for a simple yet delicious recipe.

Oil | 2 Cup (32 tbs) (For Deep Frying) | |

Sweet yogurt | 3 Cup (48 tbs) | |
Green chutney | 1 Cup (16 tbs) | |
Sweet tamarind chutney | 1 Cup (16 tbs) | |

Cumin powder | To Taste (Roasted cumin Powder) | |
Coriander powder | To Taste | |
Red chili powder | To Taste | |
Black salt | To Taste |
GETTING READY
Blend the soaked urad dal with just the right amount of water. The batter should be smooth and thick like any vada batter
MAKING
To the bhalla batter add salt an cumin seeds. Whisk it well.
Wet your hand with a little water, take some batter in the same hand ( the water is so that it doesn’t stick), make a small well and stuff it with raisins and cahews and cover it up.
Deep fry the bhalla in hot oil till it turns golden brown.
Take the bhallas out onto a tissue paper to soak the excess oil.
Soak the bhallas in water water to wash away the oil and soften them. Do this twice.
Now transfer the bhallas to arm water seasoned with a little salt.
FINISHING
Squeeze out water from the bhallas and place them in a bowl.
To the same bowl add, sweet yogurt, Green chutney, Sweet tamarind chutney
Season it with salt, cumin powder, coriander powder, red chili powder and black salt to taste.
SERVING
Serve it cold.
