Sugar | 1 1/2 Cup (24 tbs) | |
Cow milk | 2 Liter | |
Lemon | To Taste (To curdle the milk) | |
Saffron | 1/4 Teaspoon | |

Rose water | 1/4 Cup (4 tbs) | |

MAKING
For the rabri, in a large pan take 1 liter of milk and start heating it on a low flame, it would take a long time. When the milk is reduced slightly add saffron to it. Stir the Milk every minute so that the malai/cream does not separate.
When the rabri is done(neither thick not thin) add the sugar (1/4 cup or more)
For the chenna, boil the milk stirring it occasionally; curdle it using the lemon juice after switching of the flame, slowly and gradually. Strain the solids using a muslin cloth.
Add water to the chenna to wash the lemony flavor and make it soft, press it gently to remove all the water. Then, let it hang for an hour.
Knead
In another pan add 1 cup of sugar and 5 cups of water. Heat it to make sugar syrup.
To make the rasmalai, knead the chenna for 3-5 minutes to bring it together. Make small balls.
Into the boiling sugar syrup add the chenna balls. Cover and cook on medium flame for 7-10 min. they would double up in size.
Rest the chenna balls and rabri. Strain the sugar syrup from the balls multiple times.
To the rabri add rose water, cardamom, fennel and clove. Add the chenna bas to the rabri
SERVING
After atleast 3-4 hrs, the rabri soaked rasmalais are ready for serving. Adjust consistency with mik if required.
