Upma is a great south indian dish. The combination of channa dal (gram dal) and urad dal (Black gram) gives the Upma a divine taste. Must catch it.
  Semolina 1 Cup (16 tbs) (Rava)
  Clarified butter 1 Tablespoon (Desi Ghee)
  Oil 1 Tablespoon
  Mustard seeds 1⁄2 Teaspoon
  Channa dal 1⁄2 Teaspoon (Gram Dal)
  Black gram 1⁄2 Teaspoon (Urad Dal)
  Asafoetida 1 Pinch (Hing)
  Green chilies 2 , chopped
  Curry leaves 6
  Onion 1 Large
  Mixed vegetables 1 Cup (16 tbs) (Peas, Cauliflower And Carrots)
  Coriander leaves 1 Tablespoon
  Water 2 1⁄2 Cup (40 tbs)
  Salt To Taste
  Lime juice 1
  Fried cashewnut 1 Teaspoon (To Garnish)
  Sultanas 1 Teaspoon (Kismis)
  Chopped coriander leaves 1 Tablespoon (To Garnish)

Roast semolina on a tava on a stove with ghee, stirring constantly till it looses the raw smell.
Keep aside.
Microwave covered oil, mustard seeds, channa and urad dal and hing for 1 minute.
Add chillies, curry leaves and onion and microwave for 2 minutes.
Mix in the vegetables and microwave together, stirring in between, for 3 minutes.
Add water and salt and microwave for 5 minutes.
Let it stand for 5 minutes.
Remove from the microwave.
The rest of the cooking is done on the stove.
Stirring constantly, add semolina in a stream, to the above mixture and cook (on the stove) until dry (about 3-5 minutes).
Mix in 1 tablespoon of coriander leaves and lime juice.
