Sea Foam Icing

Ingredients
  Brown sugar 1⁄3 Cup (5.33 tbs)
  White sugar 1⁄3 Cup (5.33 tbs)
  Water 1⁄3 Cup (5.33 tbs)
  Corn syrup 1 Tablespoon
  Egg white 1
  Cream of tartar 1⁄4 Teaspoon
Directions

Combine in saucepan the brown sugar, white sugar, water and corn syrup.
Cook until syrup forms a soft ball in cool water.
Beat 1 egg white with the cream of tartar until stiff peaks form.
Add syrup to egg white in a slow, steady stream, beating constantly.
Spread around sides of cake.
This is good, if not better, made the day before it is served.
