Cream Cheese-Pineapple Icing
|Crushed pineapple||1 Can (10 oz)|
|Butter||1⁄8 Cup (2 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Lemon juice||1 Tablespoon|
|Cream cheese||3 Ounce|
|Confectioner’s sugar||1 Cup (16 tbs)|
Combine pineapple, butter and sugar in saucepan; cook until mixture is thickened and transparent, stir- ring constantly.
Let stand until cool.
Combine lemon juice and cream cheese; blend in confectioners' sugar.
Add pineapple mixture; beat well.
Spread on cake.
