Fondant Icing

Ingredients
  Sugar 500 Gram
  Water 175 Milliliter
  Salt 1 Pinch
  Lime/Tartaric acid - 1/4 teaspoon dissolved in 1 teaspoon water 1 , juiced
  Stock syrup/Water 1⁄4 Cup (4 tbs) (As Required)
Directions

MAKING
1.In a pan, heat water and sugar on low flame.
2.Stir the mixture a few times so that the sugar gets fully dissolved.
3.Stir in lime juice or tartaric acid and let the mixture boil.
4.Do not stir so that the mixture forms into a ball.
5.Turn off the flame and once the bubbles stop, put the mixture in a clean rinsed bowl.
6.Whisk the mixture until firm and white.Once settled at room temperature, knead into fondants.

SERVING
7.Use as fondant icing.
