Pineapple Icing

Pineapple icing is easy and quick to make. This icing enhances taste of cakes and cookies. This flavorful pineapple icing can be made anytime. It is great on pineapple cakes and cookies in particular.
Ingredients
  Shortening 1 Tablespoon
  Butter 1 Tablespoon
  Salt 1⁄4 Teaspoon
  Lemon rind 1⁄2 Teaspoon, grated
  Lemon rind 1⁄2 Teaspoon
  Pineapple juice 1⁄4 Cup (4 tbs)
  Confectioner' s sugar 3 Cup (48 tbs)
  Confectioners sugar 3 Cup (48 tbs)
Directions

MAKING
1)In a bowl, mix together shortening, butter, salt and lemon rind.
2)Add pineapple juice alternately with confectioners' sugar, beating well after each addition.

SERVING
3)Use the pineapple icing on cookies and cakes when desired.
