Strawberry Meringue Icing
|Egg white||1 (Small Egg)|
|Cream of tartar||1⁄8 Teaspoon|
|Strawberry juice||2 Tablespoon|
|Sugar||1⁄2 Cup (8 tbs)|
|Crushed strawberries||1⁄3 Cup (5.33 tbs), drained|
Combine first 5 ingredients in top of double boiler.
Stir to mix and beat with a rotary beater or electric mixer over boiling water until mixture stands in firm peaks, (about 7 minutes).
(Upper pan should not touch surface of water.) Add berries and continue to beat until mixture is very stiff again.
Spread on cake.
Enough for two 8-inch layers.
