Flavored Glazed Icing

Ingredients
  Icing sugar 4 Ounce
  Warm water 1 Tablespoon
  Flavorings 1
  Coloring 1
Directions

If the sugar is lumpy, break up the lumps by rolling the sugar with a rolling-pin before sieving.
Sieve the icing sugar and put into a small bowl over hot water.
Add the 1 tablesp warm water gradually.
Stir until all the sugar is dissolved and the icing is smooth and warm.
Do not allow to get too hot or the icing will lose its gloss.
Add the flavouring and the colouring a drop at a time until the required shade is obtained.
The icing should be thick enough to coat the back of the spoon; if too thin add more sugar, if too thick add more water.
When of the correct consistency, cool slightly, then use at once.
This quantity will coat the top of a 6-8-in cake.
Coffee icing: Add 1/2 teasp coffee essence to the basic recipe, omitting 1/2 teasp of the water.
Lemon icing: Substitute strained lemon juice for all or part of the water in the basic recipe.
Add a few drops of colouring.
Orange icing: Substitute strained orange juice for all or part of the water in the basic recipe.
Add a few drops of colouring.
