Rice Pudding With Strawberry Topping

|Vanilla rice pudding||1 Cup (16 tbs), prepared|
|Strawberries||3 Cup (48 tbs), washed and hulled|
|Granulated sugar replacement||1 Teaspoon|
Place strawberries and sugar replacement in a blender or food processor.
Process into a puree.
Spoon strawberry topping over rice pudding just before serving.
Garnish with mint leaves if desired.
