Healthy Whipped Topping
|Ice water||1⁄2 Cup (8 tbs)|
|Skim milk powder||2⁄3 Cup (10.67 tbs)|
|Lemon juice||2 Tablespoon|
|Unflavored gelatin||1 Teaspoon|
|Boiling water||1 Tablespoon|
|Pure vanilla extract||1 Teaspoon|
|Grated lemon rind||1 Teaspoon|
In medium sized mixing bowl, combine ice water, skim milk powder and lemon juice; mix together.
Beat with electric beaters, set at high speed, until mixture is firm (approximately 5 to 10 minutes).
Blend in the honey.
In individual custard cup, dissolve gelatin in one tablespoon boiling water, stirring continuously.
Beat into mixture, blending thoroughly until well combined.
Add vanilla and lemon rind.
Refrigerate topping, covered, for 15 to 20 minutes before serving.
