Double Chocolate Ice Cream

This is a cooked custard ice cream - so it takes a little bit of planning... but the results are well worth it! Nothing, we repeat, nothing beats home-made ice cream!

Ingredients

35% cream 2 Cup (32 tbs) , divided (((((500 ml)))))
Unsweetened cocoa powder 3 Tablespoon
Bittersweet chocolate/Semisweet chocolate 5 Ounce (((((150 g)))))
Milk 1 Cup (16 tbs) (((((250 ml (Homo or 2%))))))
Granulated sugar 3/4 Cup (12 tbs) (((((175 ml)))))
Salt 1 Pinch
Egg yolks 5 Large
Vanilla extract 1/2 Teaspoon

Directions

MAKING

1. In a saucepan, combine 1 cup of cream with cocoa. Whisk to thoroughly blend in the cocoa.

2. Place the pan on flame and bring to a boil, then reduce the heat and simmer at a very low boil for 30 seconds, whisking constantly.

3. Remove the pan from heat and add chocolate. Stir until smooth.

4. Stir in the remaining cup of cream and pour the mixture into a large bowl, scraping the saucepan completely.

5. In the same saucepan warm together milk, sugar, and salt over low flame.

6. In a separate bowl, whisk together the egg yolks.

7. Slowly pour the warm milk into the egg yolks, whisking constantly. Pour the egg yolk mixture back into the saucepan.

8. Place the pan on flame and stir the mixture constantly over medium heat, until the mixture thickens and coats the back of the spatula or reaches around 170°F when measured with thermometer.

9. Pour this custard mixture into the bowl with chocolate and stir until smooth.

10. Pour vanilla and mix well. Cover and refrigerate overnight.

FINALIZING

11. Then freeze it in your ice cream maker according to the manufacturer's instructions.

12. Transfer into an airtight container and freeze for a couple of hours or until ready to serve.
