Stemilt Cherry & Peach Ice Cream

Ice cream is that summer right of passage that makes time stand still while memories are made. I still remember standing over a cumbersome wooden ice cream maker counting the rotations in the hope that it would make it churn faster. Making homemade ice cream is something everyone should do at least once a summer, if not more. My recipe for fresh cherry and peach ice cream captures the essence of summer one spoonful at a time. Im using Stemilt sweet cherries and tree ripened organic peaches because I love the fact that the Mathison family, who owns Stemilt, has orchards located on the same grounds that their ancestors homesteaded back in 1893.

Ingredients

Egg yolk 2
Half and half 2 Cup (32 tbs)
Heavy whipping cream 1 Cup (16 tbs)
Vanilla extarct 1 Dash
White baker's sugar 1 Cup (16 tbs)
Vanilla bean 1
Salt 1 Pinch
Peaches 1 Cup (16 tbs) (Fresh Stemlit Peaches)
Cherries 1 Cup (16 tbs) (Fresh Stemlit Cherries)

Directions

MAKING

1. Add the dairy to a medium sauce-pan with the vanilla bean and warm on low heat while you whisk the egg yolks and sugar together in a large mixing bowl.

2. Gradually add the warm cream from the sauce pan into the egg mixture, stirring as you add the cream.

3. Once the transfer is complete, return the mixture to the sauce pan and cook on medium heat for about 20 minutes until the mixture coats your spoon.

4. It is important not to let it boil, the heat should be simmering, if you see a bubble appear, remove it from the heat and reduce the heat to avoid any further bubbles.

5. Once thick, remove from heat and allow it to steep at room temperature for 30 minutes.

FINALIZING

6. Once cool, add the fruit and then place in the fridge overnight to set before adding it to the ice cream maker.

SERVING

7. Serve as desired.
