Fresh mint sprigs
4 Medium (bought from a bakery)
1 Cup (16 tbs)
1. Split the coconut macaroons into half.
2. Add a dollop of ice cream on each half macaroon and place the other half on the top.
3. Garnish with mint.
3. Serve as an easy and quick dessert.
Make sure you're ice cream is softened so it can be easily applied to the macaroons. If you have small macaroons, instead of splitting you can use 2 macaroons for one ice cream sandwich.
