Ice Cream Gateau St. Honore

Ingredients
For the pastry base (choux pastry)
  Water 1⁄4 Pint
  Fat 1 Ounce
  Sugar 1 Teaspoon
  Plain flour/Self raising flour 3 Ounce
  Whole eggs 2
  Egg yolk/3 small eggs 1
  Butter 1 1⁄2 Ounce
  Flour 3 Ounce
  Water 1⁄2 Cup (8 tbs) (To Mix)
For the glace icing
  Icing sugar 3 Ounce, sieved
  Coffee essence 1 Teaspoon
For filling and decoration
  Whipped cream/Butter icing 1 Tablespoon
  Angelica 1
  Vanilla ice cream 1 Pint (1 Brick)
Directions

GETTING READY
1. Start by preheating the oven to 450F degrees

MAKING
2. To prepare a choux pastry, take a saucepan, and in it, pour water and place fat and sugar , then heat it untile the fat melts
3. Once the fat has melted, remove the pan from the heat, and stir in the flour, now place the pan on low heat and cook thoroughly, keep stirring until the mixture is dry and it forms a ball, clean the pan now
4. Again take the pan off from the heat, and add eggs, start beating properly, make sure to beat slowly so that mixture becomes smooth
5. Once the mixture is smooth, take the pan away from the heat and let it cool for sometime.
6. To prepare the pastry base, start by rubbing the butter into the flour and combine it properly to a frim paste with little water
7. On a greased baking sheet, place the mixture and roll it into a ring shape, make sure it should be 7 inches in diameter
8. In a piping bag, fit a 1/2 inch nozzle, and spoon in the choux paste
9. Pipe the paste around the edge of the base
10. Finally bake the pastry at 450F for 15 minutes
11. To prepare the glace icing,in a in a bowl, blend together the sieved icing sugar, coffee essence and a little water
12. Also fill whipped cream or butter icing into the choux buns, and also ice the tops with the glace icing
13. Cover tops with glace icing
14. On the rim base, spread cream or icing and stick buns on top
15. Place the buns and in between of them pipe with cream or butter icing, and decorate with leaves of angelica

SERVING
16. Spoon vanilla icecream into the Gateau St. Honore and serve immediately
