Ice Cream Meringue Pie
|Sugar||1⁄2 Cup (8 tbs)|
|Baking powder||1⁄2 Teaspoon|
|Graham cracker crumbs||1⁄2 Cup (8 tbs) (7 Crackers)|
|Semisweet chocolate pieces||1⁄2 Cup (8 tbs)|
|Butter pecan ice cream/Black walnut ice cream||1 Quart|
Grease and flour a 9-inch pie pan; set aside.
Preheat oven to 350°F (175°C).
In a small mixer bowl, beat egg whites until frothy.
Gradually add sugar.
Beat until stiff and glossy.
Fold in baking powder, salt, crumbs and chocolate pieces.
Spoon into prepared pan, gently building up side with back of spoon.
Bake 20 to 25 minutes.
Fill with ice cream.
Cut into wedges, spoon chocolate syrup or fudge sauce over
and serve immediately.
