Jubilee Ice Cream Dessert

Ingredients
  Mixed candied fruit 1 1⁄3 Cup (21.33 tbs)
  Rum 3 Tablespoon
  Boiling water 1 Tablespoon
  Whipping cream 2⁄3 Cup (10.67 tbs)
  Vanilla ice cream 1 Pint
  Finely chopped pistachio nuts 1 Tablespoon
Directions

MAKING
1. Halve the bigger pieces of the candied fruit; the smaller ones can be left whole
2. In a bowl, mix together rum and water; add it to the fruit and leave it for half an hour
3. Whip the cream till thick
4. In each of the individual glass, add two or three spoonfuls of ice cream

SERVING
5. Add equal portions of the fruit to the glasses, pipe a rosette of cream and sprinkle pistachio nuts before serving
