Basic Fruit Ice
|Unflavored gelatin||1 Tablespoon (1 Envelope)|
|Sugar||1 Cup (16 tbs) (Adjust Quantity Depending Upon Sweetness Of Fruit Juice)|
|Sweet fruit juice/1 pint each crushed fruit and water||1 Quart (Any Berry, Peach / Apricot Nectar, Pineapple / Orange Juice)|
|Lemon juice||2 Tablespoon|
Mix gelatin and 1/2 cup sugar in a saucepan, add juice, and heat and stir over low heat until gelatin and sugar dissolve with the water and, when dissolved, mix in fruit.)
Taste for sugar and adjust as needed.
Mix in lemon juice, tint an appropriate color; if you like, pour into 2 refrigerator trays, and freeze until mushy.
Spoon into a large bowl and beat hard until fluffy.
Beat egg whites to very soft peaks, fold into fruit mixture, spoon into 3 refrigerator trays, cover, and freeze until firm.
