Lucuma Ice Cream

A delicious Lucuma flavored Ice Cream made with cashews and sweetened with yacon. Vegan and raw, of course. Also free of wheat, gluten, dairy, sugar, eggs.
Ingredients
  Lucuma powder 1⁄2 Cup (8 tbs)
  Cashew 1 Cup (16 tbs)
  Vanilla syrup 1 Tablespoon
  Yacon syrup 1⁄4 Cup (4 tbs)
  Filtered water 1 Cup (16 tbs)
Directions

MAKING:
1)In a blender process together lacuma powder, yakon syrup, cashews, vanilla syrup and water.
2)Set this aside in the freezer ideally overnight.

SERVING:
3)Serve the scoops in bowls and enjoy!
