Prune Ice Cream
|Whipping cream||1 Cup (16 tbs)|
|Lemon juice||3 Tablespoon|
|Sugar||1⁄4 Cup (4 tbs)|
|Grated lemon rind||3⁄4 Teaspoon|
|Prunes||3⁄4 Pound, cooked, pitted and chopped to make 1 1/2 cups|
|Chopped nuts||1⁄4 Cup (4 tbs)|
Have cream thoroughly chilled.
Remove to a cold bowl, add lemon juice and beat with a rotary beater until fluffy and stiff.
Beat in the sugar, salt and lemon rind.
Now fold in the prunes and nuts.
Immediately turn into refrigerator tray and place in freezing compartment for 6 to 8 hours.
