Fresh Berry Ice
|Boysenberries/Blackberries / olallieberries||3 Cup (48 tbs)|
|Water||3⁄4 Cup (12 tbs)|
|Sugar||3⁄4 Cup (12 tbs)|
|Lemon juice||3 Tablespoon|
In a blender or food processor, whirl berries until pureed.
Pour through a sieve to remove seeds.
Combine puree with water, sugar, and lemon juice.
Mix well so sugar is dissolved.
Freeze puree in divided ice cube trays.
When puree is frozen, transfer cubes to plastic bags if you wish; return to freezer.
To serve, remove desired number of frozen puree cubes from freezer and let stand for about 5 minutes at room temperature.
With a food processor, whirl about 4 to 6 cubes at a time, using on off bursts to break up the ice.
Then process continuously until velvety.
Spoon into serving containers and serve at once.
If you don't have a food processor, place ice cubes in a mixing bowl and smash them into small pieces with a wooden spoon.
Then beat with an electric mixer until smooth€”slowly at first, then gradually increasing to higher speeds.
Beat puree into slush.
