Mix the egg yolks with the honey and vanilla in a bowl set over saucepan of simmering water.
Add the milk and whisk for about 8 minutes until mixture thickens slightly.
Pour mixture into ice cream maker and freeze according to instructions.
If no ice cream maker is available, freeze mixture in an ice tray for 1 hour, remove from freezer, beat mixture with electric mixer, return to freezer.
Repeat this process every hour for three hours.
Freeze until ready to serve Decorate with strawberries.
