Green Tomato Hot Dog Relish
|Ground green tomatoes||4 Cup (64 tbs)|
|Ground bell pepper||4 Cup (64 tbs) (Red Variety)|
|Ground onions||4 Cup (64 tbs)|
|Ground cabbage||4 Cup (64 tbs)|
|Chili pods||12 , ground (Hot)|
|Salt||1 Cup (16 tbs)|
|Vinegar||4 Cup (64 tbs)|
|Sugar||6 Cup (96 tbs)|
|Mustard seed||2 Tablespoon|
|Celery seed||2 Tablespoon|
Combine the tomatoes, bell peppers, onions, cabbage and chiles in a large bowl.
Sprinkle with the salt.
Let stand at room temperature, covered, for 8 to 10 hours.
Rinse and drain well.
Combine the vinegar, sugar, mustard seed and celery seed in a bowl; whisk to blend.
Combine the tomato mixture and vinegar mixture in a large kettle over medium high heat; bring to a boil.
Ladle into hot sterilized jars, leaving 1/2 inch headspace; seal with 2 piece lids, and process in a boiling water bath for 10 minutes; or let cool to room temperature, then cover and store in the refrigerator.
