Salmon With Horseradish Butter

Ingredients
  Butter/Margarine 1⁄2 Cup (8 tbs)
  Prepared horseradish 1 Tablespoon
  Dry mustard 1⁄2 Teaspoon
  Salt 1⁄4 Teaspoon
  White pepper 1⁄8 Teaspoon
  Whole dressed salmon 5 Pound
  Dill 8
  Lemon 1 Small
  Red onion 1 Small
Directions

For horseradish butter, in a small mixing bowl beat butter 30 seconds to soften.
Beat in horseradish, mustard, the 1/2 teaspoon dill, the salt, and pepper.
Cover and chill butter till serving time.
Using heavy foil, fashion a foil pan to hold the salmon.
Place sprigs of dill and lemon slices in cavity of salmon.
Lay salmon in pan; place pan in center of the cooking grill.
Grill 45 to 60 minutes or till fish flakes easily when tested with a fork.
Just before serving, skin salmon and transfer to a serving platter.
Serve with horseradish butter.
Garnish with sliced red onion, additional lemon slices, and additional dill sprigs, if desired.
