Beet and Horseradish Relish

Ingredients
  Diced beets 16 Ounce
  Sugar 1 Tablespoon
  Minced onion 1 Tablespoon
  Salt 2 Teaspoon
  Pepper 1⁄8 Teaspoon
  Vinegar 1⁄2 Cup (8 tbs)
  Horseradish 1⁄2 Cup (8 tbs)
Directions

Drain beets; reserve liquid.
Combine beets with sugar, onion, salt, pepper, vinegar, horseradish.
Add enough beet liquid to cover.
Refrigerate.
