|Full fat cream cheese||8 Ounce|
|Tomato butterflies||1⁄4 Cup (4 tbs)|
|Black olives||1⁄4 Cup (4 tbs), stoned|
For the egg and horseradish bites, cream the butter and horseradish together well and spread onto the crackers. Top each with a slice of egg and a gherkin fan.
For the tomato bites, beat the cream cheese until soft. Put it into a piping bag fitted with a star vegetable nozzle and pipe a whirl of cheese onto each cracker. Garnish with tomato butterflies and a piece of black olive.
Prepare both these canapes as near as possible to serving time, as the crackers may soften. Makes 44
