Pecan Lemon Honey Puffins
|All purpose flour||1 Cup (16 tbs)|
|Milk||1 Cup (16 tbs)|
|Finely chopped pecans||3 Tablespoon|
|Softened butter||90 Milliliter|
|Finely grated lemon zest||1 Teaspoon|
In a large bowl, combine flour and salt.
Make a well in the center.
In another bowl, beat together eggs and milk.
Pour into flour mixture, beating just until smooth.
Fold in pecans.
Spoon batter into prepared muffin tin, filling cups two-thirds full.
(If using custard cups, place them on a cookie sheet.) Bake in preheated oven for 25 to 30 minutes or until they puff up and are well browned.
In a bowl combine butter, honey and zest.
Spread over warm puffins.
