|Soft margarine||1⁄2 Cup (8 tbs)|
|Superfine sugar||1⁄2 Cup (8 tbs)|
|Clear honey||4 Tablespoon|
|All purpose flour||2 1⁄4 Cup (36 tbs)|
|Baking powder||1 Teaspoon|
|Chopped mixed candied peel||1⁄3 Cup (5.33 tbs)|
|Lemon curd||6 Tablespoon|
Cream the margarine and sugar until just mixed .
Add the egg and honey and mix until incorporated.
Add the flour, baking powder and salt and process to a soft dough.
Put heaped teaspoonfuls of the mixture on to a greased baking sheet.
Flatten the tops with a fork dipped in cold water.
Put a little peel on top of half the cookies.
Bake at 350Â°F for 20 minutes.
Lift carefully on to a wire rack to cool.
When cool, sandwich pairs of cookies together with lemon curd, with peel-topped cookies on top.
