Spinach Stir Fry With Shiitake And Honey
|Groundnut oil||3 Tablespoon|
|Shiitake mushrooms||12 Ounce, sliced (350 Gram)|
|Garlic||2 Clove (10 gm), crushed|
|Baby spinach||12 Ounce (350 Gram)|
|Dry sherry||2 Tablespoon|
|Clear honey||2 Tablespoon|
|Spring onions||4 , sliced (Scallions)|
1) In a large preheated wok, heat the groundnut oil and stir-fry the shiitake mushrooms for about 5 minutes, or until the mushrooms are tender.
2) Stir in the crushed garlic and baby leaf spinach and stir-fry for a further 2-3 minutes, or until the spinach has just wilted.
3) In a small bowl, combine the dry sherry and clear honey, then sprinkle the mixture over the spinach and heat thoroughly.
4) Spoon the stir-fry in the warm serving dishes, garnish with the spring onions and serve immediately.
