Spinach Stir Fry With Shiitake And Honey

Ingredients
  Groundnut oil 3 Tablespoon
  Shiitake mushrooms 12 Ounce, sliced (350 Gram)
  Garlic 2 Clove (10 gm), crushed
  Baby spinach 12 Ounce (350 Gram)
  Dry sherry 2 Tablespoon
  Clear honey 2 Tablespoon
  Spring onions 4 , sliced (Scallions)
Directions

MAKING
1) In a large preheated wok, heat the groundnut oil and stir-fry the shiitake mushrooms for about 5 minutes, or until the mushrooms are tender.
2) Stir in the crushed garlic and baby leaf spinach and stir-fry for a further 2-3 minutes, or until the spinach has just wilted.
3) In a small bowl, combine the dry sherry and clear honey, then sprinkle the mixture over the spinach and heat thoroughly.

SERVING
4) Spoon the stir-fry in the warm serving dishes, garnish with the spring onions and serve immediately.
