Roast Honey Pork
|Pork leg||5 Pound (2.5 Kilogram)|
|Green ginger||1 Tablespoon|
|Honey||1⁄2 Cup (8 tbs)|
Score leg of pork by cutting through the skin and fat in a criss-cross fashion.
Run a knife between the skin and the meat to form a pocket.
Grate green ginger and spread evenly into pocket.
Mix oil, ground ginger and salt together, brush over pork and place in oven at 180°C (350°F).
Periodically brush with remaining oil while cooking.
Allow 60 minutes of cooking time per kilo.
Glaze pork by pouring honey over it about 15 minutes before it is done.
Delicious with candied carrots and sweet potato, taro or cassava cakes.
