Cold Honey Pork

  Loin pork 2 1⁄2 Pound
  Strained honey 12 Ounce
  Prepared colman's mustard 3 Tablespoon
  Salt To Taste
  Pepper To Taste

Ask the butcher to bone and roll a 2 1/2 lb. loin of pork and have him salt and pepper the inside beforehand, if he will do it Mix thoroughly 12 oz. strained honey and 3 tablespoons of prepared Colman's mustard.
Sprinkle the roast with salt and pepper.
With a palette knife coat all of the sides of the pork with the honey and mustard mixture.
Wrap the roast in tin foil.
Place on a rack in a baking pan.
Place in a pre-heated moderate oven 400°F, Reg 6 and bake for at least two hours.
Test with a skewer to be sure that it is done.
For the last 20 minutes of baking unfold the tin foil so the roast can turn to golden brown but do not let it burn.
Lower the heat if necessary
