Honey And Spice Duckling

  Salt 2 Teaspoon
  Whole black pepper/Szechwan pepper 2 Teaspoon, coarsely ground
  Ground ginger 1 Teaspoon
  Five spice powder 1⁄2 Teaspoon (Homemade)
  Domestic duckling 5 Pound (1 Whole)
  Honey 1⁄4 Cup (4 tbs)
  Soy sauce 2 Tablespoon

Combine salt, pepper, ginger, and five spice powder.
Sprinkle cavity of duck with some of the salt mixture; rub remaining on skin.
Skewer neck skin to back; tie legs to tail.
Twist wing tips under back.
Prick skin all over with fork.
Place duckling, breast-side up, on rack in shallow roasting pan.
Roast in a 375° oven for 1 3/4 to 2 hours, spooning off fat occasionally.
Mix honey and soy sauce; baste duckling with soy mixture.
Roast 15 to 20 minutes more or till drumstick moves easily in socket, basting often with soy mixture.
