Roasted Honey Pepper Pork
|Boneless pork loin roast||1|
|Honey||1⁄4 Cup (4 tbs)|
|Dijon mustard||2 Tablespoon|
|Mixed peppercorns||2 Tablespoon, crushed|
|Thyme||1⁄2 Teaspoon, crushed|
Carefully score roast 1/2 inch deep completely around roast, without cutting string.
Combine all remaining ingredients; mix well.
Spoon or brush 2/3 of honey mixture over pork to coat.
Place meat on roasting rack in baking pan.
Roast at 325° for 1 hour; brush with remaining honey mixture and cook 30 minutes more or until thermometer registers 160°.
