Tarragon Cocktail Quiches

Ingredients
  Shredded cheddar cheese 1 Cup (16 tbs)
  Chopped chives 2 Tablespoon
  Chopped tarragon/2 teaspoons dried whole tarragon 2 Tablespoon
  Eggs 2
  Half and half 1⁄2 Cup (8 tbs)
  Salt 1⁄4 Teaspoon
  Pepper 1⁄4 Teaspoon
  Ground nutmeg 1⁄8 Teaspoon
  Hot sauce 1 Dash
Directions

Combine cheese, chives, and tarragon; spoon evenly into pastry shells.
Combine remaining ingredients; stir well.
Pour into pastry shells, filling three-fourths full.
Bake at 350° for 30 to 35 minutes or until set.
