Herb Fried Scallops

Ingredients
  Ocean scallops 1 Pound
  Eggs 2
  Lemon juice 1 Tablespoon
  Fine dry bread crumbs 1 Cup (16 tbs)
  Dried herbs 1⁄2 Teaspoon (thyme, tarragon, dill and parsley)
  Vegetable oil 2 Tablespoon
  Tartar sauce 2 Tablespoon
Directions

GETTING READY
1. Clean and rinse scallops
2. Cut large ones in half

MAKING
3. Dry scallops completely on paper towels, then beat eggs well
4. Add lemon juice and mix your choice of herbs with bread crumbs
5. Dip scallops in crumbs, in egg mixture, then in crumbs again
6. Heat 1/4 inch of oil in frying pan and fry coated scallops about 3 minutes on each side, until golden
7. Now drain on paper towels

SERVING
8. Serve immediately with tartar sauce
