|Small button mushrooms||8 Ounce (225 Gram)|
|Olive oil||6 Tablespoon|
|Crushed coriander seeds||1 Teaspoon|
|Lemon juice||2 Tablespoon|
|Sea salt||To Taste|
|Freshly ground black pepper||To Taste|
|Chopped parsley||1 Tablespoon|
1 Using a damp cloth, wipe the mushrooms.
2 Cut them into halves or quarters.
3 In a large frying pan, heat 4 tablespoons of the oil
4 Add in the coriander seeds and fry for about 2 minutes.
5 Add the mushrooms, stirring well.
6 Cook, covered for 3 to 5 minutes until tender.
7 Remove from the heat.
8 Transfer the mushrooms and the liquid to a bowl.
9 Stir in the remaining oil and lemon juice.
10 Correct the seasoning.
11 Allow to cool.
12 Place in the refrigerator and chill before serving.
13 In small bowls, serve sprinkled with chopped parsley.
14 Buttered wholewheat bread goes very well with this.
