Sauteed Cucumber With Chives
|Olive oil||1 Teaspoon|
|Snipped chives||2 Tablespoon|
|Fresh basil||1 Tablespoon, minced|
|Lemon juice||2 Teaspoon|
|Ground black pepper||1⁄4 Teaspoon|
Peel the cucumbers and halve lengthwise.
Unless the seeds are very small, remove them with the tip of a spoon.
Cut the cucumbers into 1/3" slices.
In a large frying pan over medium-high heat, warm the oil for 1 minute.
Add the cucumbers and stir-fry for 5 minutes.
Sprinkle with the chives, basil, lemon juice and pepper.
Toss to coat.
