Grilled Zucchini Ribbons With Thyme
|Minced fresh thyme||1 1⁄2 Tablespoon|
|Olive oil||1 Tablespoon|
|Lemon juice||1 1⁄2 Teaspoon|
|Garlic||1 Clove (5 gm), minced|
In a small bowl, combine thyme, oil, lemon juice, and garlic; set aside.
With a sharp knife, slice zucchini lengthwise into 1/4-inch (6-mm) strips.
Sprinkle lightly with salt.
Arrange zucchini on cooking grate.
Place lid on grill.
Cook, turning once halfway through cooking time, until zucchini is tender when pierced (7 or 8 minutes).
With a wide metal spatula, transfer zucchini to a platter.
Drizzle with thyme mixture.
