|Madeira/Port wine||2 Tablespoon|
|Chopped tarragon||1⁄2 Tablespoon|
Season the tournedos with salt and pepper and brown on both sides in a very hot pan.
Add 2 tablespoons of the butter and cook a further 3 minutes.
