Spicy Tarragon And Onion Sauce

  Egg yolks 2
  White wine 1 Tablespoon
  Butter 8 Ounce, clarified
  Lemon juice 1 Teaspoon
  Sea salt 1 Pinch
  Cayenne 1 Pinch
  Tarragon vinegar 1 Teaspoon, chopped
  Onion 2 Tablespoon
  Capers 1 Teaspoon, chopped
  Sour pickles 1 Teaspoon, chopped
  Worcestershire sauce 1⁄2 Teaspoon

In a small saucepan, over very low heat, whisk egg yolks and white wine until mixture thickens.
Remove from heat.
With a whisk, blend in clarified butter a little at a time.
Mix thoroughly between additions.
Once mixture starts to thicken, fold in lemon juice.
Add remaining ingredients.
Mix until sauce is smooth.
