Heat the oil in a wok or large deep frying pan, add the onions and cook for 5 minutes until golden.
Lower the heat, stir in the spices and cook for 2 minutes, stirring.
Add the ginger, garlic, tomatoes and chillies and stir well.
Cook for 5-7 minutes until fairly thick.
Season with salt to taste and cook for 1 minute.
Spoon into a warmed serving dish and sprinkle with the chopped coriander.
Garnish with coriander leaves.
