Cornish Hen With Tomato And Herbs
|Flour||1 Cup (16 tbs)|
|Eggs||2 , lightly beaten|
|Tomato puree/Tomato paste||1 Tablespoon|
|Fine bread crumbs||1 Cup (16 tbs)|
|Thyme||1 Teaspoon, chopped|
|Sage||1 Teaspoon, chopped|
1 Preheat the oven to a moderate temperature.
1 In a bowl, combine eggs with tomato paste and mustard.
2 In a separate bowl, combine breadcrumbs with herbs.
3 Truss the hens.
4 Roll the hens in flour.
5 Dip in the egg mixture.
6 Dredge in the herbed breadcrumbs to coat evenly.
7 Place in the center of the preheated oven and roast for about 30 minutes.
8 To check the doneness, insert a skewer or a knife in the thickest part of flesh and if the juices run clear, the hen is cooked.
9 Carve and serve
10 For variation in taste, you can also choose to deep fry the hens instead of roasting.
