Sausage And Hash Brown Omelette
|Bulk pork sausage||1⁄2 Pound|
|Potatoes||2 Medium, cooked, shredded (2 Cups)|
|Chopped onion||1⁄4 Cup (4 tbs) (Fresh Or Frozen)|
|Chopped green pepper||1⁄4 Cup (4 tbs) (Fresh Or Frozen)|
|Milk||1⁄4 Cup (4 tbs)|
|Shredded processed american cheese||1⁄2 Cup (8 tbs) (2 Ounces)|
In large skillet brown the sausage.
Drain sausage, reserving 1/4 cup drippings; set sausage aside.
Return reserved drippings to skillet.
Combine potato, onion, and green pepper; pat into skillet.
Season generously with salt; sprinkle with pepper.
Cook over low heat till underside is crisp and brown.
Blend eggs, milk, 1/4 teaspoon salt, and dash pepper.
Pour over potatoes.
Top with cheese and sausage.
Cover; cook over low heat for 6 to 8 minutes.
Loosen omelet; cut in wedges to serve.
Makes 4 servings.
