Hash Brown Omelette

Ingredients
  Frozen loose pack hash brown potatoes 1 Cup (16 tbs), partially thawed
  Finely chopped onion 2 Tablespoon
  Snipped parsley 2 Tablespoon
  Butter/Margarine 2 Tablespoon
  Salt 1⁄4 Teaspoon
  Pepper 1 Dash
  Beaten eggs 4
Directions

MAKING
1) In a 8" skillet, saute the, onion, parsley and potatoes in the butter or margarine over a medium heat for 5 min.
2) Season with the salt and pepper.
3) Pour in the eggs and cook over a medium heat.
4) Allow the uncooked egg to set by lifting edges till mixture is set.

SERVING
5) Serve in a nice dish.
